Date Paste

Use date paste as a sweetener for desserts, smoothies, oatmeal, sauces and more.
Ingredients
- whole Medjool dates, pitted
- dates soaking liquid
Instructions
1. Place whole, pitted dates in a heat-proof container. Pour in just-boiled water from the kettle to completely cover the dates. Leave on counter to soak for 10-15 min.
2. Drain the dates, reserving the soaking liquid.
3. Blend the soaked dates with a few tablespoons of the soaking liquid until smooth. Stop to scrape down the sides as needed and add more water, 1 Tbs at a time if you need to get the blades moving.
4. Transfer date paste into an airtight container. Store in the fridge for up to 2 weeks or in the freezer for up to 3 months. If frozen, thaw it out in the fridge as needed.
Notes:
You can make date paste using other varieties of dates, such as Deglet Noor but Medjool dates are the sweetest and softest. If using dried dates, soak in just-boiled water for 1-2 hrs at room temperature.
A high-powered bullet/personal blender works best. A mini food processor or immersion blender works well too. A full-size blender may be too large to make small batches of 1-2 cups.
